Grifco Chats with Dukes St James’s Head Chef Nigel Mendham

Grifco recently sat down to speak with culinary whiz Nigel Mendham, Executive Head Chef at DUKES ST JAMES LONDON’s Thirty Six restaurant. We asked Nigel to tell us about what inspires him in and out of the kitchen, the latest food trends we should be keeping an eye out for, and what every novice cook should be serving this season.

Grifco: How would you impress at a dinner party on a budget and if budget was not an issue?

NM: If I was cooking a dinner party on a tight budget, I would start with creating a maple glazed pork belly garnished with some English onions for an appetizer. For a main course, you cannot go wrong with serving a delicious whole chicken. I would use all of the bird to make different dishes like a pie with the leg, turn the breasts into mini Kiev’s, crispy winglets and make a sauce from the carcass. I would serve something like Eton Mess for dessert, it’s one of my top puddings for spring and summer, when English berries are in season.

And for a dinner party with no budget? Hmm, well there is no option but to go all out and use foie gras, truffles, fillet of beef, amedei chocolate and belle époque champagne!

Grifco: Who have you recently been inspired by?

NM: Roald Dahl’s Charlie and the Chocolate Factory is one book I have loved every since I was a boy, which inspired me to create my new children’s Chocolate Afternoon Tea.

Think everything and anything out of Willy Wonka’s factory – from specialty fudges, chocolate bon bons, mini chocolate milkshakes to melt in the mouth chocolate filled cookies and brownies with a twist. I don’t want to give too much away, but this tea promises to win anyone with a sweet tooth’s heart.

NM: Food trends in today’s gourmet industry are forever changing, but I very much believe that simple food done well will stand the test of time. This is one of my core values behind the excellent locally sourced British food we prepare and serve at Thirty Six.DUKES AUG 12 11043_low

Grifco: What is one ingredient you think everyone should be using in their kitchens?

NM: Again I would have to recommend sticking with simple food, which you can use for a variety of dishes to please every pallet in your household. At Thirty Six we swear by Caroll’s Heritage potatoes, which are sourced from up North in Northumberland, where I am originally from. Potatoes are the key ingredient behind so many dishes, whether you are creating a quick treat or a comforting feast. Every cook should have potatoes in their kitchen!

Grifco: When you aren’t cooking for guests at Thirty Six, what’s your favourite dish to make yourself?

NM: I like to make myself a good dry aged rib eye with béarnaise sauce and French fries. That dish is hard to beat after working a long day!

Sebastien is modest to a tee…. In fact when asked what his highest achievement has been to date he does not reel off accolades of prizes but tells us that teaching a young Mauritian hotel cleaner and ball “picker upper” to play golf to a high level is his biggest achievement to date. In fact the man in question is now one of the most popular golf pros at Paradis Hotel. Sebastien has a scratch handicap so we knew as did the other guests that children are in very capable hands! In fact Sebastien has won 12 Grand Prix Golf Championships when he was an amateur so capable hands is an understatement!

Sebastien has recently launched the Junior Golf Academy at Paradis Hotel and Golf Club, Mauritius and shared some top tips on what he likes to teach children:

Sebastien - What do you suggest families do if they want their children to try golf?

“Think about booking a one hour lesson for your children with an instructor and see how you go… “

Sebastien commented that year after year children come back and play with instructors who they have played with for 7 or 10 years. Even on holiday at a resort golf course the guests improve. The Junior Golf Academy is a one week programme. It is 3 hours long each day and the children get a picture and souvenir at the end of it. This is good for children aged 6 – 12 but the one hour lesson is a good starting point for children from 4 years up.

Sebastian – What is your main goal?

Longer term I would love to see Paradis build a smaller golf course with 3 or 4 holes specifically for children. It would take a 40 to 50 minute journey to play. Watch this space…

23 hours in Berlin

I must admit that the thought of visiting Berlin for 23 hours for back to back meetings and an evening media event did not fill me with thoughts of relaxation and pampering – but the new Waldorf Astoria Berlin managed to make my busy day as smooth and stress-free as possible on a recent trip to the city over ITB week.

On arrival I was whisked through a quick check-in and onwards to my room, thrilled to hear I’d been upgraded to a supremely spacious Junior Suite. What must be some of Berlin’s largest hotel rooms proved a great retreat for a hectic business trip. Gorgeously soft robes for curling up in post-work and a complimentary shoe shine service to be polished to perfection the next day were two lovely touches.

At the end of the day, this was an appealing vision…

But before my day of meetings kicked off I had a peek around the hotel and checked out the Presidential Suite – a super-glam suite that looks out over West Berlin from its lofty height atop the towering Zoofenster Building. With floor to ceiling windows along its length the suite is filled with light. A glittering bathtub with stunning city views,  sprawling living area complete with baby grand piano and bar, ridiculously comfy looking bed and a direct view out over the Zoo (we spotted elephants!) were a few of the things we liked best.

After some great international meetings with Italian Marie Claire, Panorama Icon, Food & Wine and Conde Nast Traveler US, I attended a Media Hub event at the hotel, where luxury brands Waldorf Astoria Hotels and Resorts and Conrad Hotels & Resorts were represented and over 100 members of the media were in attendance.

It wasn’t all hard work – Michelin-starred Chefs Heinz Beck and Pierre Gagnaire gave us cooking demonstrations, each showing how to create one of their signature dishes, and a pop up spa offered gorgeous mini back massages and oxygen facials to unwind after a busy day and showcase the spa experience at both hotel brands.

When the event wrapped up later that evening, we headed out for a late team dinner and a taste of the local beer before a well-earned sleep and morning breakfast meeting at Les Solistes, the hotel’s super stylish restaurant. A modern, sleek dining space, it’s a lovely setting for breakfast and a very special experience come lunch and dinner service when Pierre Gagnaire is at the helm.

An Andaz Liverpool Street Birthday Party By Bompas and Parr

Grifco recently had the pleasure of celebrating Andaz Liverpool Street’s 5th birthday in serious style.

flyer_front_1_resizedAndaz Liverpool Street teamed up with Bompas and Parr to create an unforgettable evening celebrating the past, present, and future of food in honour of Andaz’s 5th birthday. The evening started in Andaz’s 1901 restaurant, where the birthday party guests mingled…

IMG_6199_1901… and sampled the dangerously delicious elderflower liqueur cocktail, which was served out of a silver cauldron.

IMG_6198_1901Guests were then treated to specially designed scallop, salmon, tomato jelly, and cucumber sauce appetizer – Bompas and Parr’s take on a modern day culinary treat.

IMG_6205_1901The birthday party then went back in time to the year of 1913 in Andaz’s secret Masonic Temple, which was illuminated with candles – the perfect setting for an extraordinary event.

IMG_3735Guests feasted on aged sirloin, Yorkshire pudding, roast potatoes, various side dishes, and a delicious 2005 Rioja Reserve from Luis Cañas, Spain.

IMG_3793For the final course, guests headed to the future in Andaz’s studio, where the Galaxy of Puddings were served on an eye-catching liquid table.

IMG_6235Apparently liquid tables will be a popular dinner party staple in the future – it certainly was an out of this world dinner setting and a great conversation starter!

An interview with Peter Tschirky, General Manager of Grand Resort Bad Ragaz

Grifco recently caught up with Peter Tschirky, now the General Manager of Grand Resort Bad Ragaz, to hear about the latest cutting edge spa trends for 2013.

Grifco: Which spa treatments do you predict will be the most popular in 2013 at Bad Ragaz?

PT: I think the most popular spa treatments at Bad Ragaz this year will be the treatments that combine our soothing thermal water, such as the new Water Journey Massage. This is a take on our Singing Bowl massage, that actually takes place in one of our thermal water swimming pools. It is a sensuous and invigorating spa treatment where bowls are placed on the body and made to gently vibrate by contact with a mallet, where the resulting resonance penetrates through the whole body and leads to deep relaxation.

Grifco: What are the current most popular spa treatments?

PT: One of our most popular spa treatments at the moment is our Golden Honey Treatment, thanks to its abundant healing properties, where warm honey is poured over the skin and massaged into the back, neck and shoulders. Also popular is our Traditional Swiss Monastic Medicine, which uses medicinal herbs gathered from the Swiss mountains tried and tested over centuries to provide unparalleled healing results. Grifco: In your opinion, what are the best new beauty brands for 2013 and why?

Grifco: Can you tell us about any new 2013 Grand Resort Bad Ragaz spa treatments you are particularly excited about?

PT: This year we’re really excited about the new male “Razor-Sharp Grooming Treatments”, as all elements of the treatment have been adapted for men. The facial – a Niance Men Power Facial – has been crafted to provide resilience and firmness to the male skin. It also includes a facial and neck massage, breathing exercises for deep relaxation as well as cleansing, peeling, mask and serum application. I think some men are less inclined to pamper themselves, which is either do to with lack of time or simply male pride, however, at Bad Ragaz we understand that pampering doesn’t have to be limited to women, we want everyone to be able to indulge in some R&R.

Grifco: If you were to choose a spa treatment at Grand Resort Bad Ragaz in 2013, what would you choose and why?

PT: I think the new Water Journey spa treatment would be my treatment of choice as this is something totally new to me and to Bad Ragaz, which hasn’t been done before and provides a level of relaxation which I believe no other treatment in the world can offer.

World Travel Market, 5th – 8th November 2012

Earlier this month, I was lucky enough to attend World Travel Market, the leading global event for the travel industry, at London’s ExCel Exhibition Centre. The event is a fantastic opportunity to showcase a diverse range of destinations and industry sectors to UK and international travel professionals; where people can network and conduct business with the global travel trade.

During my three days at WTM, I came across a mixture of lively and interesting people from all over the world, each offering very different opportunities and experiences. In total, there were nearly 5,000 exhibitors at the event. I was impressed and humbled to see such an enormous coming together of so many countries in one space, given the world today and its many conflicts.

My first two days at WTM were spent working on the Hyatt Hotels stand where I met Andrew Ashmore, the Vice President of Global Sales EAME (pictured below far right with Karen Roberts, Sales Executive for Leisure Travel). Joining Andrew and Karen in the photo are Adi Sidhwa, Director of Sales & Marketing at the Grand Hyatt Erawan (far left), and Stephen Radcliffe (middle left), General Manager at Bali Hyatt.

There were a number of other Hyatt general managers from around the world who I spoke to at length about future Hyatt events and projects, including Patrik Bayardo from the recently opened Andaz Amsterdam. Here he is, showing us the November issue of Hyatt Life:

Next door to the Hyatt stand was Qatar Airways who were offering tea and pastries to visitors, as well as a chance to meet their resident falcon, for all the bird lovers!

 

Which I made friends with too!

On my third day at WTM, I met the lovely Wilderness Safaris team who had flown over especially from South Africa for the event. I spoke with various members of the team, including Tracy Bamber, Kim Nixon, Outi Bourke, Grant Woodrow, and Bruce Simpson. Unfortunately, my mobile ran out of battery before I could get a proper picture of them all, but I did manage to sneak a pic of some of their amazing local art.

I also had the chance to meet some other special characters who had flown in from Kenya for the event.

During my spare time, I was able to explore the ExCel centre in its entirety with my round-the-world ticket. My tour began in Slovakia, where I came across a woman selling some eccentric-looking hats – Ascot next year maybe?

WTM is exhausting, so when I started feeling a bit peckish, I was lucky enough to stumble upon some kind ladies from Torún, Poland, who offered me some local gingerbread they were making:

After fuelling up nicely, I continued on my travels where I soon received a cheery welcome from a bunch of Israeli musicians.

After all that dancing with my new Israeli friends, I needed some time to relax, so I headed to the Islas Canarias…

…where I was joined by my good friends Antonio Banderas…

 

…and Barack Obama!

Once I was fully recharged again, I packed my bags and caught a train from Italy…

…to India, where on arrival I was greeted by my new friends…

…only to be waved off shortly again afterwards as I headed on towards…

But I couldn’t stay long there as I had to meet my friends for tea in Bhutan…

…and then make my way to Vietnam to pick up some pretty souvenirs…

 …followed by a quick stop via Japan.

Suddenly I realised it was getting late and I should be heading home soon. So, after grabbing a quick re-energising cup of Colombian coffee…

…I jumped in a boat from Costa Rica…

…and headed up to El Savador to say goodbye to my new friend Pedro…

…and borrow his Formula 1 car…

…which I drove all the way up to my final destination…

A few cocktails later, I finally hopped in a black cab back to London, exhausted after having experienced the trip of a lifetime!

WTM is an amazing opportunity to meet various cultures and peoples from around the world. For those of you who have never been before, I strongly recommend visiting next year’s event. For a chance to travel around the world, visit WTM – no passport needed!

Who knew that Beetroot could be so delicious?

Every job has its perks and as a foodie, being invited to an exclusive dinner hosted by Tom Aikens (headlining act of the London restaurant scene and the youngest chef ever to be awarded two Michelin stars don’t you know), was not only the highlight of my week…but my month!

On behalf of Beachcomber Hotels and Tom Aikens, I was fortunate enough to experience some of Tom’s innovative, creative dishes at one of his stunning restaurants in Chelsea, London. The event was to launch the series of one-off Master Classes Tom will be presenting at the prestigious Beachcomber Royal Palm in Mauritius. For three days only, in March 2013 guests will be able to partake in these classes but also enjoy sit down, private four-course dinners cooked by the celebrity chef over these three nights.

To Start: The night began with Jasmine cured salmon with viola flowers, pickled apple & jasmine oil. The combination of the salmon and viola flowers was something completely new to me. It was light, fresh and the salmon… simply ‘melt in your mouth’ delicious. The other guests and I agreed this dish presented to you in Mauritius, on a warm tropical evening with the waves gently crashing ashore would be magical. However, as it was drizzling outside we had to come back to reality. Our main course sounded perfect for the cold British weather. 

Main: After reading the main on the menu, Piglet belly, braised & then roasted with squid & pineapple, I was slightly dubious. I have had both pork belly and squid however never together. As I now know, the two complement each other hugely and it was absolutely delicious, the best piglet belly I had experienced. The small cubes of pork meant it wasn’t too overwhelming and I took my time to enjoy the flavours.

 I wasn’t prepared though for the pudding…

Pudding: The diners at the table quietly told their neighbour that beetroot ‘wasn’t really their thing’. I agreed…to me it tastes a little too earthy… but Tom created something that can only be described as utterly unusual and utterly….flamboyant, ‘Candied Beetroot, yoghurt parfait, sweetened beets and port syrup’.

From beetroot meringue to beetroot sorbet each little beetroot delight was so different from the next… how can you make one vegetable into a desert and create quite so many things from it? •           Three Four-Course Dinners cooked by Tom Aikens each evening

Snapper Ceviche at Gaya Island Resort, Borneo

Always ones to be hot on the heels of the latest food trend, Grifco has been obsessed with the refreshing dish that is Ceviche for some time now. With the likes of Ceviche on Frith Street, Lima London and now Sushi Samba opening their doors and introducing us to the healthy delights of smackingly fresh raw fish cured in zingy flavours, we couldn’t wait to master this dish ourselves! So imagine how pleased I was to learn that on a recent trip to the new (and stunning) Gaya Island Resort in Borneo I was to have a personal Ceviche lesson from one of the resort’s best chefs. Luckily the recipe was super easy and the results impressive! Read on to learn how to recreate delicious Snapper Ceviche yourself at home…

Snapper Hinava

 (Cured Snapper Fillet With Lime Juice)

A native dish of the Kadazan

Ingredients

Cured Snapper

Snapper Fillet (Seabass is a good alternative) 80g

White Wine Vinegar 100ml

Lime Juice 100ml

Salt 3g

Ginger (Finely sliced) 5g

2 Birds Eye Chillies (Finely sliced)

1 Shallot (Sliced)

Sakura Cress

Lemon Air

Lemon Juice 80ml

Lime Juice 80ml

Sugar 8g

Salt 2g

Lecite 3g

Coriander Oil

Coriander Leaves 20g

Rock Salt 3g

Corn oil 50ml

Method

For the cured snapper, Slice the fish fillet into half inch thick strips. Marinade in the white wine vinegar for 30 minutes, then pat dry with a paper towel. Transfer the fish fillet to a flat container & add the rest of the ingredients. Let it marinade for at least 1 hour.

For the lemon air, combine all the ingredients and foam using a hand blender or whisk. Admire how impressive and cheffy this looks with minimal effort!

For the coriander oil, place coriander, salt and corn oil into a blender and blend on a high speed. Transfer to a bowl and let the flavours mature. Strain the mixture to be left with a delicious, flavoured oil.

To assemble, roll the fillets individually and arrange on a plate. Then garnish with the ginger, chilli and shallot taken from the cured mixture. Last but not least, top with the lemon air, sakura mix and drizzle with coriander oil.

Voila! Delish.

Maldives Day Five

Last day in the Maldives…so we were all pretty sad! But what a way to end our adventure at Huvafen Fushi…underwater spa treatments, amazing snorkeling around the top of the island, delicious healthy lunch at Raw the innovative ‘raw’ cuisine restaurant and stingray feeding on Stingray Beach. The piece de resistance of our final day was a private Vinum Dinner in Huvafen Fushi’s underground wine cellar. Vinum houses a collection unmatched by any other resort in the world and we enjoyed a six course wine meal with Huvafen’s on island sommelier, Ilyas Easa teaching us all about the wines we were sampling. Executive chef Daniel Johnson had been given the task of matching the menu to the wines and he created a real treat for us…
